A killer leg workout and a Father’s Day date to see Jurrasic World (fantastic movie, btw) didn’t leave me with any time or energy for meal prep. It’s no big deal though – we have a lot of food that needs to be used up. Specifically, premade salad. I always have the best intentions with salad and really do love it, but I think it’s a colossal waste of my money. I always intend to eat more salads and it never works. My eyes are definitely bigger than my stomach on that one. So, it’s salad for lunch and dinner tomorrow. Plus I picked up some awesome organic / gluten free frozen meals to try. If I can get the convenience of a frozen meal with an ingredient list containing only words I know the definition to, I’m all for it!
But we did need something for breakfast so I threw together a super simple, five ingredient egg bake. Yum!
What you need
10 eggs, whisked
2 cups spinach
1 cup diced kalamata olives
1 cup diced cherry tomatoes
A sprinkle of feta cheese
What to do
Mix all ingredients together and transfer into a greased baking dish
Bake @ 350 for 45 minutes
