There is absolutely nothing wrong with a good ol’ breakfast casserole to get you through the week!
Denver Omelette Casserole

What you need
9 eggs, whisked
¼ cup half + half
1 green pepper
1 white onion
3 cups diced ham
2 tsp garlic powder
1 tsp paprika
1 tsp sea salt
1 cup cheddar cheese
What to do
Preheat oven to 350°. Whisk eggs and half + half together in a large mixing bowl. Place green pepper and onion in a food processor and pulse until finely chopped. (Nobody in this house likes big chunks of green pepper!) Mix pepper/onion, diced ham and seasonings into mixing bowl with eggs.
Grease a large baking dish with olive oil or coconut oil cooking spray. Pour mixture into dish. Top with cheddar cheese. Bake for about 40 minutes.
We perfectly paired ours with Applegate Sunday morning bacon and organic hashbrowns seasoned with salt, pepper and chili powder. Yum!
