Have I written yet about my husband and his carb-free diet? If I have… well, I’m about to tell you all about it again. For the last couple of weeks, he’s been trying to stick to the Keto diet. He has done a really great job. He sleeps better, has more energy, and has even lost weight. Obviously, the thought of sleeping better and having more energy sounded VERY appealing to me. So I decided I was going to do it with him. I made it 24 hours! But then, I had bread.
For a long time, I believed that my stomach problems were the result of a gluten intolerance. I, of course, was tested for Celiac disease but it came back negative. I learned that sometimes people average 2-3 false negatives before finally being diagnosed. One thing was sure, I felt sick after I ate bread, and I felt better when I didn’t eat it. But then somethings came up that lead to finding out my stomach issues were not in fact directly related to bread. Hallelujah, bring on the carbs! I went from being mostly gluten free for almost 2 years to eating all the bread, all the time. I was thrilled! But, the 15lbs that accompanied the sandwiches and slices of pizza were less thrilling.
Living “without” for so long is hard. So I went a little crazy when I added bread back into my diet and I’m having a hard time letting go. I can definitely tell a difference in the way I feel overall when I am eating less processed, gluten free foods. But I also lack self-control and I really love bread, so it is going to take a lot of work to try to get on board with this whole keto thing.
I could learn a thing or two (Ok, or a million) from my husband. So, I listen to his food requests.
I have tried cauliflower pizza crust in the past and it was always lacking a consistency similar to regular pizza crust. No matter which recipe online I followed, my crusts were ending up soggy. He still thought that they tasted okay, but I wasn’t impressed. So this time when he asked me to make him a keto pizza – I decided that I needed to make my own crust.
And I am so happy to share that I think I have perfected the cauliflower pizza crust recipe! This crust was a nice balance of soft but crisp, and dare I say it – almost tastes like traditional pizza crust! So, bake it and then top it however you like, you won’t be sorry and I will be making this again and again!

Perfect Cauliflower Pizza Crust! {Keto,Gluten Free}
Ingredients
½ cup almond flour
1lb “riced” cauliflower *
1 egg, lightly beaten
1/3 cup parmesan cheese
1 ½ tsp oregano
1 tsp sea salt
Directions
- Preheat oven to 400°
- Prepare your cauliflower: I used Green Giant’s cauliflower crumbles and followed the instructions on the packaging to steam in the bag. Remove from microwave once steamed and pour contents into a thin cloth. Let cool for a while, then twist and squeeze excess moisture out. Be careful, this will hurt like a b-i-t-c-h & burn your hands if you don’t wait for the cauliflower to cool first.
- Add cauliflower to a large mixing bowl and add all other ingredients, mix well.
- Place the mixture on a parchment paper lined baking sheet, then using your hands -smooth and spread into a square shape. I pressed the crust down to about a ½ centimeter.
- Place baking sheet in the oven and let crust bake for about 30 minutes..
- Remove from the oven and add your toppings of choice! We used pizza sauce, pepperoni, black olives and cheese.
- Place the pizza back in the oven for about 15 minutes until toppings are cooked through to your liking.
- Slice and enjoy! I promise, you won’t even taste the cauliflower.

I took the shortcut, and bought pre-packaged cauliflower crumbles from the produce section. You could make the cauliflower rice yourself, but I prefer not to because it is messy and time consuming. I love a good shortcut to cut my kitchen time down. If you prefer to make your own cauliflower rice, more power to ya!
I haven’t figured out an easy or convenient way to add nutritional information to my posts yet, but who are wondering – almond flour only has about 6 carbs per 1/4 cup and about 24 grams of carbs in the cauliflower. So, this is a nice low carb meal.
